TASTING NOTES

The nose and palate are in symmetry with aromas of white peach and nectarine accompanied by vibrant citrus, flint, floral and grapefruit pith lingering on the palate. A subtle honey undertone sets the stage for this textured, medium bodied wine. Lingering acidity enhances the overall harmony of flavours.

Pairing: Oysters or a delicate scallop ceviche

WINEMAKER'S NOTES
Whole cluster pressed gently, the juice was first fermented in stainless tank in the Fall of 2022, then transferred to concrete tank to finish fermentation. The wine was held in concrete, on lees, for 6 months aiming for a textural mouthfeel.
