The Osoyoos Syrah from Chicane Vineyard were also whole berry destemmed, fermented in stainless steel and barreled down separately. Pumpovers were happening twice a day during this period. After fermentation was complete, the wine had a post maceration period of 10 days before pressing off the skins. After aging for 3 months, the base wine was bottled and the secondary ferment was carried out in bottle, in the traditional method - a timeless technique.
